Chocolate Peanut Butter Ice Cream Stuffed Dates, like a mini Snickers ice cream bar, but so much healthier and made with just 6 ingredients. Chewy, sweet, and soft caramel-like Medjool dates, split, and then stuffed with your favorite vanilla ice cream, creamy peanut butter, and roasted peanuts. Each date is dipped in chocolate, then frozen, and finished with a dusting of flaky sea salt. They taste magically just like a Snickers with vanilla ice cream in the middle. DELICIOUS!

I’ve been saying this a lot lately, but I’m so excited to share these “no-effort” ice cream bars. These dates are honestly magical and taste shockingly just like an ice cream Snickers bar.

The difference? No caramel, no marshmallow, and aside from the sugar in the ice cream, no added sugar. I just adore these so much. They really are perfect.

The idea came to me pretty simply. I really, really wanted to have an excuse to make some peanut butter-stuffed dates. They’re one of my favorite, sweet, and healthy snacks to enjoy. Most of the time, I’ll keep them stashed in the freezer and enjoy them frozen with flaky sea salt. Peanut butter-stuffed dates are such a deliciously simple 2 to 3-ingredient treat. Sometimes I’ll cover them in chocolate and then freeze them. So it’s dates, peanut butter, and chocolate – YUM!

Since no one really needs a recipe for something so simple, I’ve never shared it. I literally just told you how to make them in one sentence.

But then! Then I thought, what about adding vanilla ice cream? That could make them kind of like ice cream Snickers bars. It sounded SO YUMMY.

Once I had the idea, I never looked back, I immediately began to make them. And they might just be one of my most favorite creations.

Details

Step 1: pit the dates

Slice each date in half lengthwise, but do not cut all the way through. Grab the pit and discard.

Try to use the softest, plumpest, fresh Medjool dates you can find. I get mine from Rancho Meladuco Date Farm. They’re the best I’ve ever had. I mean, so sweet, so soft, and so chewy. They taste better than a piece of caramel candy. I also love that they’re organic and harvested by a family-owned business. The owners, who I’ve known for years now, are so sweet.

Step 2: stuff with ice cream

Use your very favorite vanilla ice cream. It can be dairy free, vegan, or classic. You can even use frozen yogurt, though ice cream is probably yummiest. I love Tillamook French vanilla or vanilla bean. Here’s an explanation I found on the difference between Tillamook’s three vanilla ice creams.

Stuff each date with a spoon full of ice cream, then freeze for 30 or so minutes.

Step 3: add the peanut butter and peanuts

Now grab the dates and drizzle or spoon over your favorite salted peanut butter. I use Whole Foods 365 organic creamy peanut butter (just peanut butter – not peanut butter spread). The only ingredients are dry roasted peanuts and salt. Then top with peanuts and freeze again until completely frozen.

Step 4: cover in chocolate

Once frozen, dip each date into melted chocolate, then sprinkle with sea salt if desired. Freeze to chill the chocolate, then keep these stashed away in the freezer.

Assuming your dates are super soft, you should be able to enjoy these straight out of the freezer. They’ll be chewy, creamy, sweet, and salty – literally perfect. Better than a Snickers bar!

These stuffed dates are a healthy way to enjoy a summer ice cream treat with limited sugar. Which just makes us love this recipe even more!

Instructions

  • 1. Line a baking sheet with parchment paper.
    2. Working quickly stuff each date with roughly 1-2 tablespoons of ice cream. Place on a prepared baking sheet. Freeze for 30 minutes.
    3. Grab the frozen dates, spoon/spread the peanut butter over the ice cream. Top with peanuts. It's going to be a bit messy. Freeze for 1 hour or overnight.
    4. Melt the chocolate and coconut oil together in a bowl in the microwave. Dip each frozen date in the chocolate and place on a parchment-lined baking sheet. Sprinkle with sea salt (if desired). Freeze until completely frozen, 2 hours. Eat and enjoy the sweet, creamy, chewy goodness.

    Had high hopes for these. I bought the recommended brand of dates and everything! But once everything was frozen, the dates were nearly impossible to bite through and enjoy! Open to suggestions on how to find soft, fresh dates?

    1. Oh no I’m so sorry to hear that! I would let the dates soften for a bit after they’ve been in the freezer and they should be a bit easier to bite into! xT

    These are delicious! A bit of a process with the freezing steps in between, but worth it. My dates were already pitted (a plus!), but some of them were on the big side, making the finished product a bit difficult to eat in polite company, if you know what I mean. I am still bringing them to a dinner at our neighbors tonight. Next time I make them I am going to try chopping the dates and then putting each layer in a small candy liner to make them more bite-sized. I will report back when I do. But made as instructed, the flavors are to die for!! Thank you for the recipe!

    Already made these because I had the ingredients and they were amazing! I used Jeni’s ice cream brown butter almond brittle flavor instead of vanilla ice cream, and it was to die for. The crunch on the outside for the soft ice cream on the inside is everything. 10/10 recipe! (so easy too)

    Can’t wait to (try to) make these!! I know it would probably be a guesstimate, but how long do you think these might keep in the freezer? (Zero experience making a frozen treat but these will change that!)

An online nutrition calculator is likely going to show these will be higher calorie, carb and fat (and more time, $ and effort) than a literal Snickers ice cream bar, even if made from natural ingredients – full of sugar, the added sugar note in the recipe doesn’t make sense. Another option is to get Kind frozen bars, sold at Target 🤷‍♀️
