It’s here!! Spooky Cocktail Saturday is back and we have some of my most favorite cocktails I’ve ever shared. I am more excited than any other year. My cocktail ideas are flowing. I’m kicking off our fall/holiday cocktails with the spookiest, yummiest autumn punch!
As with all Cocktail Saturday recipes, I keep these posts short and sweet, so let’s jump into it!
I haven’t shared many punch recipes, but I did a couple last holiday season and loved them so much. So I’m bringing them back! I especially love punch recipes because while they chill in the fridge they develop an even more intense and delicious flavor.
We can all love that!
The other ingredient that’s greatly exciting me this season is ginger. It’s a spice I haven’t played around with much in the past, but I’m having so much fun with it now!
Here are the details
Step 1: mix the punch base
You’ll need pomegranate juice. You could also use cranberry juice, but I prefer pomegranate juice for more sweetness and flavor. I prefer to use a pomegranate juice like Pom, with no added sugar. You’ll also need vodka, apple butter, bitters, and cinnamon sticks. And then the secret to this drink, ginger. The ginger really adds a zing and spiciness that’s so delicious in cocktails.
Mix this all together in a large punch bowl. I LOVE these skull tumblers, so cute and “spooky”. Oh, and this pumpkin jar would be such a cute punch bowl too!
Chill the mix until you plan to serve. This can be made three to four days ahead.
Step 2: mix the gingered sugar rim
This is the “enchanted/magical” element of this fun punch. It makes things sparkle and feel haunted, yet still pretty.
This is a mix of coarse sugar, brown sugar, and candied ginger. Dip each glass in pomegranate juice and then the sugar. It creates the perfect sugared rim.
Step 3: add the champagne and serve
To serve, pour over the champagne, then top off each individual glass with spicy-sweet ginger beer.
So easy, spooky, magical, and cute – all at the same time. This drink is really festive!
This cocktail is perfect for any and all of your upcoming Halloween parties. But it’s also great to enjoy with a small group of family or friends.

Enchanted Graveyard Pomegranate Punch

Ingredients
- 8 cups pomegranate juice
- 1 cup vodka
- 1/2 cup spiced apple butter
- 4 dashes orange bitters
- 4 cinnamon sticks
- 1 bottle (750 ml) champagne
- 2 bottles/cans ginger beer
- 1-2 star anise
For the Rim
- 2 tablespoons coarse sugar
- 3 tablespoons brown sugar
- 1/4 cup candied ginger pieces, finely chopped
- pomegranate juice, for the rim
Instructions
- 1. In a large pitcher, combine the pomegranate juice, vodka, apple butter, and bitters. Stir until combined. Add the cinnamon sticks and 1-2 star anise (if you like). Chill until ready to serve. 2. Just before serving, add ice to your punch bowl. Pour over the champagne and ginger beer. Add ice to tumblers and pour over the punch. Enjoy! 3. To make the ginger rim, on a small plate, mix the coarse sugar, brown sugar, and ginger. Dip the rim of the glass into a thin layer of juice. Then dip the glass into the sugar mix.

- 2 cups sparkling white grape juice
- 4-5 bottles/cans ginger beer
Rim
- 2 tablespoons coarse sugar
- 2 tablespoons brown sugar
- 1/4 cup candied ginger pieces, finely chopped
- pomegranate juice, for the rim
Instructions
- 1. In a large pitcher, combine the pomegranate juice, vinegar, apple butter, and bitters. Stir until combined. Add the cinnamon sticks. Chill until ready to serve. 2. Just before serving, Add ice to your punch bowl. Pour over the grape juice and ginger beer. Stir in the apples. Add ice to the tumblers and pour over the punch. 3. To make the ginger rim, on a small plate, mix the coarse sugar, brown sugar, and ginger. Dip the rim of the glass into a thin layer of juice. Then dip the glass into the sugar mix.
What would be a substitute for apple butter?

Tried out the mocktail version today and it was great! I couldn’t find orange bitters so I omitted that but I still think the flavor coming from the apple cider vinegar and ginger beer really shined through. I did want to ask what you meant about adding in apples, do you suggest fresh apple slices? Also wanted to understand the ideal proportion between punch, ginger beer, and sparkling cider?

Hey my apple butter is smooth… no chunks…worth a try. Never thought of adding apple butter to a drink.. could also substitute apple cider if the apple butter isn’t a fave…😊
What did you add at the end – dry ice?
1/2 cup of bitters, as in an entire bottle of bitters? Plus wasting a bottle of champagne by overpowering it with ginger beer? And why two types of sugar on the rim, mixed with (chewy) candied ginger? With all due respect, none of this makes any sense as a drink.
