Uncle Eddy’s White Russian, for all the festive nights ahead. Homemade simple syrup with cinnamon, honey, and nutmeg mixed together with vodka, rum, and Kahlúa. It’s the perfect holiday twist on the classic White Russian. It’s almost like an eggnog white Russian—such a delicious December night drink. Uncle Eddy would fully approve.
Happy almost Christmas Eve! I’m not ready for this holiday season to be over. This time of year is full of magic, fun, and beauty. I try to fill it with happiness and yummy food. I love creating these cocktails for you all, I have so much fun with them!
I’m so sad this is our last Christmas recipe for the year, but I saved my very favorite for today! I’ve been planning this simple cocktail for weeks, even down to these pretty glasses. I can’t wait to share!!
When I was going through drink recipes to share this season, one of my recipes was titled Uncle Eddy. It was more that I loved the idea of creating a drink that Uncle Eddy (from Christmas Vacation, of course) would drink up on Christmas Eve.
If you’ve seen the movie, which I assume most of us have, then you know that Eddy drinks eggnog. I’m not very keen on drinking eggnog, so I mixed together a drink that’s even better. A white Russian with bourbon, cinnamon, and nutmeg to give the drink a subtle eggnog flavor, just minus all the raw eggs.
It’s my favorite drink. It’s kind of dessert-like and the perfect drink to end a Christmas night celebration with.
Details
Step 1: the cinnamon syrup
A mix of honey, cinnamon sticks, and nutmeg. Simmer the honey with the cinnamon to infuse the honey with rich cinnamon flavor, then add nutmeg. The nutmeg is key here, it’s used in eggnog and provides a nice “nog” flavor.
You can make this syrup ahead of time, and then it’s ready to go for easy cocktail mixing.
Step 2: mix and stir
Now it’s time to mix. Pour the vodka and bourbon (or rum) over ice. Add the cinnamon syrup and then the Kahlúa.
Give this a stir, then pour the cream overtop. I love to finish with a cinnamon stick, freshly grated nutmeg, and then a single-star anise. It’s so festive!
You really can’t go wrong with a combo like this. It’s a bit over the top, but it’s totally ok – it’s the holidays. Uncle Eddy would fully approve of this, it’s his kind of cocktail, for sure.

Uncle Eddy’s White Russian

Ingredients
Russian
- 2 ounces (1/4 cup) vodka
- 1/2 ounce (1 tablespoon) bourbon or rum
- 2 ounces (1/4 cup) Kahlua
- 1-2 ounces (2-4 tablespoons) cinnamon syrup (directions below)
- 1-2 ounces (2-4 tablespoons) cream, or half and half
- star anise, for serving (optional)
Instructions
- 1. To make the cinnamon syrup. In a pot, combine 1/2 cup water, the honey, and cinnamon. Bring to a simmer over medium heat. Simmer 5 minutes, then remove from the heat. Stir in the nutmeg. Let cool. Keep in the fridge for up to 2 weeks.2. To make the white Russian. Fill a glass with ice. Add the vodka, bourbon/rum, Kahlua, and cinnamon syrup. Stir. Add the heavy cream and stir to combine. Garnish with cinnamon, nutmeg, and star anise, if desired. 3. To Make A Mocktail: Fill your glass with ice. Add 2 shots of espresso (about 2 ounces), and 1-2 ounces of the cinnamon syrup. Stir. Add the cream and stir again to combine. Garnish with cinnamon, nutmeg, and star anise, if desired.Â
Omg the mocktail version legit made me vomit. That combination was atrocious! Please consider testing the mocktail version and making it more palatable because the recipe you posted is undrinkable. Apple juice and milk?! Why would you ever think that would go well?
Oh yes this hits the Holiday spot! It’s also our anniversary today so we decided to imbibe this afternoon. So delicious! The syrup, oh oh oh, is it ever good. I used some Honey Whiskey that we were gifted and I think it was made for this drink.

Do NOT add the apple juice to the mocktail! No no no. I’m not sure why it’s even used as a substitute as the espresso and cream with the cinnamon syrup is perfectly good on its own! Apple juice yucks it, I unfortunately agree with the other review. But, the drink is good without it! Thank you for the regular recipe also.

What kind of rum would be best? Dark or white? I’m guessing a spiced rum may not be best for this. I don’t make a lot of cocktails, so any advice is appreciated!
