Using up those August peaches with this Frozen Peach Rosé Slushy. Fresh summer peaches blended together with a sweet honey thyme thyme syrup and chilled wine, rosè or your favorite white wine. This frosty frozen slushy is so easy to create. Simply freeze fresh peach slices, then mix everything together in a blender for a summer cocktail that’s perfectly icy, sweet, and so delicious!
Another Friday, another drink. Last week we had my favorite iced brown sugar latte. And this week, well, we’ve got something icy yet again, but boozy too. I usually reserve my cocktail posts for Saturday. But in the summer, when everyone is either off traveling or out having fun on the weekends, I figured Friday is probably best. This way we have plenty of time to hit the store before the Saturday morning crowds.
Plus, the honest truth? I know peach season is sweet, but it’s also short. So I wanted to share this recipe right away. This way we can make these fun slushies from now till summer’s end.
Jumping on in – here are the details
You’ll need lots of frozen peaches, a bottle of your favorite Rosè…or fruity white wine, some honey, thyme, and fresh peach slices.
Since peaches are at their prime right now…and I had a fresh box from Frog Hollow Farm (located outside LA). I decided I’d just freeze my own peaches. Yes, these peaches are SO GOOD that I’ve actually been looking for new ways to enjoy them! Last week I shared I shared a peach sherbet, and today we have boozy slushies!
You can easily use store-bought already frozen peaches too. But fresh peaches are the way to go for the very best flavor and color.
Make the honey thyme syrup
To lightly sweeten the slushy and infuse it with subtle notes of thyme, I made a quick honey thyme syrup using fresh peach slices, thyme, and honey.
Just simmer the peaches together with water, thyme, and honey until the peaches are soft. Then strain the syrup, discard the peach pulp and thyme, and now you’ve got a lightly sweetened peach thyme syrup.
Now…let’s make some slushies!
Add those frozen peaches to a blender. Pour over the wine. Add the sweet peach thyme syrup and a handful of ice. Blend, blend, blend until the mix is a yummy slushy consistency.
NOTE: It really helps if you have a high-powered blender or food processor for this.
I like to top each drink with a fresh or frozen peach slice and sprig of thyme.
And then that’s it. So simple, but so icy cold and refreshing! Great for all the remaining summer weekends ahead.
The bottom line here? If you have ripe peaches, or even just a bag of frozen peaches, make these slushies this weekend and really live out these remaining weekends of summer!

Frozen Peach Rosé Slushy

Ingredients
- 1 ripe peach, sliced
- 2-4 tablespoons honey or sugar
- 2-3 fresh thyme sprigs
- 1 bottle (750 ml) Rosé, or white wine
- 4 cups frozen peach slices
Instructions
- 1. To make the peach thyme syrup: Bring 3/4 cup water, the fresh peaches, honey, and thyme to a boil in a small pot. Simmer 5 minutes, until the peaches are very soft. Remove from the heat and strain through a mesh strainer into a glass jar. Chill. 2. In a blender, combine the frozen peaches, wine, peach thyme syrup, and 1/2 cup of ice. Blend until slushy. Add additional wine to thin.3. Pour into glasses and serve with fresh peach slices. Drink!
Notes
To Freeze Your Own Peaches: slice the peaches, and if desired peel them (I like to leave the skin on). Arrange the peaches on a baking sheet lined with parchment paper and freeze for 4 hours or overnight. Use as directed in the recipe.
For a stronger Drink: add 1/2 to 1 cup vodka.
Your first instructions say to bring the ‘fresh peaches’, honey, water and thyme to a boil. But you don’t list fresh peaches in your list of ingredients. Only ONE is listed, and I assume that is for the garnish. You list four cups of frozen peaches only.
Could you please let me know how many fresh peaches are supposed to be cooked with the water, honey & thme?
Hi Dorothy! The one peach is what I’m referring to when I say to boil the fresh peaches! You can snag one or two slices from that to garnish! Hope this helps 🙂 xT

I make versions of frose a lot, and I find it actually works much better if you freeze the rose into ice cubes–the consistency is much better and not watered down. Then you could maybe use half frozen peaches and half fresh and add the simple syrup.

Would you clarify for me how many peaches are needed for the syrup and how many to freeze the night before for the slushy? There are 7 of us!

1 peach is needed for the syrup and you will need to freeze 4 cups for the slushy. This is for 6 servings, you can adjust the serving size manually and the ingredients will adjust for you. I hope you love the recipe. Cheers! xTieghan
