Welcoming peach season with these Browned Butter Grilled Peaches with Cinnamon “Toast” Brioche Crumbs. Sweet summertime peach halves, grilled and finished with a drizzle of browned honey butter that’s swirled with both vanilla and cinnamon. Each grilled peach is topped with ice cream and sweet, buttery, cinnamon “toast” brioche breadcrumbs. Perfect for all of the summer nights ahead that require an easy peachy dessert. Enjoy these right off of the grill with a generous smear of browned honey butter, ice cream, and all the cinnamon “toast” crumbs you can pile on. So GOOD!
To say that I’m excited about this recipe would be a bit of an understatement. Not only is every last bite of this sweet treat delicious, but this might just be the easiest summer dessert I know of. Why? Because really all we’re doing is grilling peaches, adding butter, adding ice cream, and topping with homemade breadcrumbs. I can say with complete confidence that every juicy, buttery, and cinnamony bite is SO GOOD.
The details…
To start, find yourself some good peaches. I know that we are very early into peach season, but early, slightly underripe, peaches are actually perfect for grilling. Early season peaches tend to be firmer and a little less sweet. By throwing the peaches onto the grill, the heat slowly caramelizes them and helps to really bring out their sweetness. Using nectarines, or even sweet plums or apricots, would be equally delicious.
Once you’ve picked your peaches, there are two things left to do before you’re ready to grill.
First, the cinnamon “toast” brioche crumbs. These crumbs, while physically small, are a huge part of this recipe. Meaning, the crumbs are delicious, and yes, habit-forming too…you’ll find yourself wanting to put them on everything!
Here’s how you make the crumbs. Take brioche bread (preferably my homemade honey brioche, but store-bought works too), tear it into fine crumbs, toss the crumbs with butter and cinnamon sugar, and then bake in the oven until lightly toasted. If you love cinnamon toast in the morning, you’re going to die for these crumbs. I will be topping all of my summer ice cream and berry desserts with these crumbs. Nothing is better.
Plus, they have a very nostalgic feel since my dad’s cinnamon toast was a summertime favorite of mine growing up. Still is actually.
Second, browned honey butter. YES.
This is simple. Brown salted butter, add honey, vanilla, and a touch of cinnamon. It’s kind of like a nutty butter, butterscotch sauce, but without a ton of sugar, and it’s so delicious. You can make this way in advance or just before you grill the peaches. Either way, smother your peaches in this buttery saucy goodness.
And now you can grill.
Simply heat your grill or favorite grill pan, halve your peaches, and grill both sides. There really isn’t much to it…kind of hard to mess up. Just be sure to oil your grill grates and all will be good.
Once the peaches are off the grill, slather them in that browned butter, add vanilla ice cream, and cover in cinnamon “toast” crumbs. Maybe even go for another drizzle of browned butter too. And that’s it. Every bite is filled with hints of cinnamon, sweet honey, nutty browned butter, warm caramelized peach, creamy, cold ice cream, and extra sweet, cinnamony, buttery, brioche crumbs that give a nice little crunch with each spoonful. It’s THE summertime dessert.
Best part? You can make the crumbs a few days ahead, and the butter will keep in the fridge for at least a week. Then all that needs to be done is to grill the peaches. Perfect for feeding a crowd on a hot summer night, or your family after Sunday night dinner. And though the 4th of July is on my mind, these grilled peaches would be great anytime, any day, from now through August…
You really just need to go make these. Your Tuesday could use a sweet peach topped with browned butter, ice cream, and cinnamon “toast” crumbs.

This is SO delicious!! I love to keep some of the browned butter (in fridge) and brioche crumbs (in the freezer) on hand throughout peach season!
P.S… I mostly use vanilla Greek yogurt in place of the ice cream and eat it for breakfast. It’s so easy and tastes just as amazing! My 4 yr old son agrees 😄

These turned out SO delicious. We brushed the peaches with butter before grilling and didn’t end up using the browned butter glaze, but they were so decadent even without it! Yum!!!
