This Easy Blueberry Cherry Galette is a summertime treat that’s bursting with fresh summer cherries and blueberries, sweetened with honey, and made using flakey, buttery puff pastry. Serve with a scoop of vanilla ice cream and flaked sea salt…a delicious summer tart to kick off the season!

When life hands you a bucket of the sweetest California cherries, you do two things. First, you eat them by the fistfuls because, wow, the first cherries of the season are always so delicious.

Second, when your stomach begins to hurt from eating too many cherries at once, you get smart and bake them all into the sweetest tart. And that’s exactly what I did. I still have some cherries left over, but that’s okay. I’m packing them up and bringing them with me to LA. They’re too delicious to leave behind!

And so is this galette, I’m so excited to share the recipe with you all. I know you’ll be making this all summer long!

My cherries came from Peaches LA. They grow the sweetest peaches and early-season California cherries. I love both and will always choose their produce over others. Their peaches have never failed to be outrageously delicious, and the cherries are no different! And no, this post is not sponsored, I just truly love their produce!

The second I opened the box of the first batch of cherries, I knew I wanted to bake with them. I have so many ideas, but a simple tart sounded like the perfect recipe to kick off summer this weekend – and celebrate Father’s Day, too!

This takes no effort to make!

Here are the Steps

Step 1: pit the cherries

I use a cherry pitter to quickly remove the pits from the cherries, then I slice each cherry in half.

Prepare for stained hands, it’s worth it though!

Step 2: toss the fruit

Next, toss the pitted cherries with the blueberries. Lightly sweeten the filling with honey, then add vanilla and bourbon to richen and deepen the flavor. If you prefer not to cook with bourbon, you can easily omit it!

Step 3: roll the pastry out

Instead of making homemade pastry, I almost always use puff pastry from the freezer.

Make sure the pastry is thawed, then roll it out to a large rectangle.

Step 4: add the fruit

Arrange the fruit in the middle of the pastry, then fold the pastry over the fruit. It may seem like there are too many cherries and blueberries, but the fruit will bake down and be perfect.

Just make sure you pile the fruit in the center of the pastry, leaving a 1-inch border.

Step 5: make it sparkle

Okay, next, take coarse sugar and sprinkle it around the edge of the tart. This will bake up so pretty and add a nice touch of extra sweetness that’s not needed – but is yummy!

Bake until the edges are turning dark brown. It’s OK if some of the edges get a little overcooked!

Step 6: add ice cream

The only thing to do now is add a scoop of vanilla ice cream and slowly enjoy your slice of summer deliciousness. Every bite is bursting with sweet blueberry cherry flavor—THE BEST.

And all the dads out there will certainly love you more if you make this for them on Sunday! Promise!

You can really use whatever berry you love or have an abundance of this summer. Blackberries, strawberries, raspberries, or a combo of your favorites will all work and be delicious. Peaches in late summer will be wonderful too!

  • 1. Preheat the oven to 375° F. Line a baking sheet with parchment paper.
    2. In a medium bowl, combine the cherries, blueberries, honey, cornstarch, vanilla, and bourbon if using. 
    3. On a lightly floured surface, roll the puff pastry out into a rectangle about 1/4 inch thick. Place the pastry onto the prepared baking sheet. Arrange the fruit over the pastry, leaving a 1-inch border. Fold the edges up and over the fruit. Brush the edges of the pastry with egg and sprinkle with sugar.
    4. Bake for 30 to 40 minutes or until golden brown. It's OK if the edges get dark. Serve with ice cream. Enjoy!

    Made this and it is great. But I am not sure that the Puff Pastry was a 1/4 inch thick even before rolling – which I didn’t do.
